It is no secret that I love popcorn. It is also no secret that I passed on this obsession to my children. Luckily having popcorn kernels around is convenient and an economic snack for my popcorn loving family. However, sometimes you may need to please a more sophisticated palette; that is where this recipe comes in.
This one is quick, easy, and will not soon be forgotten. Toss your dry ingredients, pop your popcorn, and toss it all together. I pop mine by using a pot set over medium-low heat with a lid and a bit of oil in the bottom. Make sure your pot is large enough for all the popcorn once it is popped and you need to continuously move the pot around so the kernels won’t burn before they pop. Remove from heat immediately when you hear the popping slow to a stop, combine with your dry ingredients and top with freshly grated cheese.
This recipe it is targeted toward the adults in the crowd because of the heat of the spices. However I found when I tone down the cayenne the kids in the neighborhood devour it all the same. If you keep popcorn kernels on hand you will always have a snack to share even when you are tearing the kitchen apart trying to find something to serve at your impromptu neighborhood get together.
This one is great for happy hour with a nice cold beer. Enjoy!
Chili Popcorn
makes 6-8 servings
INGREDIENTS
1/2 cup popcorn
1 1/2 tsp. nutritional yeast
1 1/2 tsp. Chili powder
1 tsp. Paprika
1 tsp. Garlic powder
1/2 tsp. Cayenne pepper (increase to your taste)
1/4-1/2 cup fresh grated Parmesan cheese
Salt
DIRECTIONS
Pop it. Toss it. Pour a beer. Enjoy.
NOTES
- Use a pot that is large enough to contain your popped popcorn
- Add a bit of oil to your pot and continuously move it while popping
